Strawberry Rhubarb Smoothie Bowls

Can we take a moment to take a deep breath and gulp summer in? How is it already the end of August? I feel like we were just celebrating Memorial Day weekend and now somehow we are approaching labor day. Time flies. It goes by so fast, and if you blink you will miss it. 

Take a moment for me right now and just enjoy these last few moments of summer wherever you are. Maybe you're on vacation in some gorgeous place. Or perhaps you are standing up on a paddleboard somewhere over some icy cold water. Maybe you are at work sipping on a cool, iced tea. Wherever you are in the world, please take this moment and enjoy it because these moments go by so fast. Before you know it, you'll be swapping that ice tea for a pumpkin spiced latte and this blow will have so many pumpkin recipes on it, you won't know what to do with yourself.

The first time I learned about smoothie bowls was when I watched the surfer movie Soul Surfer where the mom made the girl an Acai smoothie bowl each morning before she went out surfing. Talk about an advertiser's dream I literally went online to Sambazon's website and purchased a case of the stuff to be delivered to my house the very next day! Although I'm not obsessed with Acai anymore, I still love to make a good smoothie bowl each week.

I picked up some frozen rhubarb form Sprouts and wondered what to do with it. I could make a pie with it, but until recently it's been over 100-degrees here every day and the thought of making a pie was nauseating. So I thought what goes great with rhubarb? Strawberries! And then I came up with this delicious Strawberry Rhubarb Smoothie Bowl recipe. I gave these smoothie bowls a little pep and added some hemp protein powder to them and some iced coffee, but if coffee isn't your jam simply leave it out. 

These smoothie bowls are loaded with healthy fats from the unsweetened frozen coconut chunks (you can pick this up from Trader Joe's and trust me you won't regret it.) I've also added a banana, frozen strawberry, rhubarb, and unsweetened coconut milk. You get your protein fill from the two scoops of hemp protein and an antioxidant boost from the fresh blueberries. 

The toppings I used for this smoothie are honey, fresh blueberries, and dried rose petals. I get so many questions about dried rose petals because I also top my bulletproof coffee with them. You can eat them, they are edible. You can find the ones I buy from Amazon here. Another awesome edible flower kit I use in many of my recipes is this one here. It's amazing, colorful, and all of the flowers are edible!

This recipe makes two smoothie bowl servings, but if you are wanting more for the fam, you can double the ingredients and should have enough for everyone. These smoothie bowls freeze well. Simply store them in freezer containers in the freezer and when ready to eat let them thaw for a few minutes and top them with whatever toppings your heart desires. Fresh fruit is always a good choice, along with unsweetened coconuts, dark cacao nibs, really the possibilities are endless! Get creative with it and enjoy those toppings!

Strawberry Rhubarb Smoothie Bowls

These delicious, easy, Strawberry Rhubarb Smoothie Bowls will be a hit in your household!

Makes: 4 Cups

Name of image (title of post is fine)

Prep time: 5 mins

Cook time: 5 mins

Ingredients:

  • ¼ cup frozen unsweetened coconut chunks
  • 1 cup frozen rhubarb
  • 1 cup unsweetened coconut milk
  • 1 banana, sliced
  • ⅓ cup of ice coffee
  • 3 scoops of hemp protein powder
  • 1 teaspoon of honey
  • 1 cup frozen strawberries

Instructions:

  1. Place all ingredients in a blender and blend on high for 3-5 minutes until smooth.
  2. Pour smoothie into two bowls and add as many or as little toppings as you like.

    I didn't know you could buy frozen rhubarb but I have fresh rhubarb and strawberries so I can make this for a healthier breakfast than I normally eat.
