Prep Steps: Make sure your ice cream maker base has been in the freezer for 24 hours prior to making this recipe. Place the prepared ice cream maker attachment onto stand mixer fitted with the dasher.
- Step 1: Make sure your ice cream maker base has been in the freezer for 24 hours prior to making this recipe. In a blender, add the fresh squeezed lemon juice and blueberries and blend on high until a blueberry puree forms. The blueberries help bring out the lemon flavor!
- The blended blueberries should almost mimic a blueberry compote. Look at that gorgeous color!
- Step 3: In a large mixing bowl, add the heavy cream, condensed milk, vanilla extract, and pumpkin spice and mix until combined.
- Step 4: Add the blueberry puree to the milk base and mix until well combined. Top with fresh lemon zest and mix again.
Step 5: Now, add the blueberry lemon ice cream base is ready for the ice cream maker. Turn on your ice cream maker, according to the ice cream maker instructions, and pour the prepared ice cream mixture into the ice cream maker base and let it mix for a half hour or until the ice cream starts to form. The colder the ice cream base is, the faster the mixture will turn into ice cream.
Step 6: Once the blueberry lemon ice cream is mixed like a blueberry swirl, add it to a cake loaf pan, seal it with tin foil, and store it in the freezer for up to two hours for the ice cream to firm up. Once it's nice and frozen, serve and enjoy! Blueberry Lemonade ice cream here we come!
Top Tip
Before you place the prepared lemon blueberry ice cream in the freezer, add more fresh lemon zest and press fresh blueberries into the top of the ice cream. This recipe is perfect for those hot summer months!
