EASY AND DELICIOUS HEALTHY DESSERT
We are all knee-deep in a new kind of normal and I think we can all agree that the only thing saving us from losing our minds right now is cooking. This is why I’m making it my mission to add as many new recipes as I can in the coming weeks. Some people say will be out of this at the end of this month, while others say life may not go back to normal for over a year. So until we actually know, the show must go on and so must the cooking!

USE UP THOSE ORANGES ON YOUR KITCHEN COUNTER
I love orange and lemon bars because they are a tart dessert with a sweet aftertaste that sends senses roaring and brings some much-needed joy to your day, which I think we could all use right now during these times. If you’ve ever made lemon bars, then making blood orange bars is going to be a sinch. The first step is to preheat your oven to 350-degrees. Then, grease a 9x13 baking pan with butter. Don’t miss this step as it’s an important one.
If you don’t grease your baking pan, the crust for the orange bars will burn. The next step is to make your crust. All you’ll to do for this is combine the butter and flour and mix it on low in a stand mixer until the mixture becomes crumbly. Take the crust mixture and press it into the prepared baking dish. Use a glass to even out the crust and press it evenly into the baking pan. Bake the crust for 20-minutes until it becomes golden brown. Remove the crust from the oven and let it cool for 10-minutes before adding in the batter.

While the crust is baking, prepare the blood orange filling. In a baking dish, combine the freshly squeezed orange juice, sugar, remaining flour, vanilla extract, eggs. Wisk to combine and pour the filling over the prepared crust. Bake at 350-degrees for 40-minutes until the filling is set. Let the bars cool in the fridge for up to two hours to set. Slice the bars and top them with orange zest and powdered sugar and enjoy!
