Memorial Day weekend is nearly here and it's basically summa, summa, summa, time! Okay so technically summer doesn't begin until June 21st, but it seems like summer to me so whose really counting? With the temps rising and the days being longer, I've got the perfect drink to cool you down and keep you chill. My healthier Affogato's are delicious and have less calories than a traditional affogato because they are made with Arctic Zero's new light ice cream!
You can use espresso or black coffee for your Affogato, whichever you prefer. I used coffee for mine, but a strong espresso is a good choice too! This drink is perfect while grilling or on a hot summer day! It also makes the perfect dessert, but be warned, it does have caffeine in it.
Arctic Zero's ice cream makes this a creamy, delicious delight! I love the new flavors too and yes, they taste just like regular ice cream. In fact, I even prefer the mint chip flavor over most brands and it's featured in this recipe and video. Any hey, if you want to leave out the coffee and just skip straight to the ice cream, I won't judge you because Arctic Zero's ice cream is tasty, creamy, and delicious!
Do you guys have any big plans for Memorial Day weekend? We are heading to a lakeside town and staying a cabin with friends! I'm super excited and am looking forward to the break. We are going to pack up our dogs and kayak's and hit the open road! And you know I'll be making some smore's! I'm secretly hoping there is no service at the cabin so I can just be one with nature, get some writing done on my new cookbook, and just relax for once! Relaxing is something I don't do very often.

This is my spin on the famous Affogato’s!
Makes: 2 Cups
- 2-scoops each of Ice Cream
- 2-cups freshly brewed Coffee
- 1/2 cup unsweeted shredded coconut flakes
- 3/4-cup of chocolate shavings
- Scoop out ice cream into sundae glasses
- Next, slowly pour hot coffee over the ice cream scoops
- Top with unsweetened shredded coconut flakes and chocolate shavings
