I feel like I haven’t been on here in a month, but it’s really only been a week. How have you guys been? I feel like I’ve been living on another planet, which honestly I sort have been recently, but more on that in a later post. Today, I bring you my easy and delicious Strawberry Blondies. These bars are basically cookie bars made with fresh strawberry slices and white and dark chocolate chunks. Strawberry blondies are the perfect dessert snack when you need a pick me up in the afternoon or when you are craving dessert! The best part is, they are super simple to make and require minimal ingredients.
These Strawberry Blondies are also great if you have strawberries that are on their last legs that you need to use up fast. The ingredients you’ll need for this recipe are fresh strawberries, flour, baking powder, vanilla extract, brown sugar, butter, Himalayan sea salt, and egg. You'll also need white chocolate chips and chocolate chunks. That’s it! These bars are the perfect treat for Spring and a delightful dessert to bring for your upcoming Easter gatherings.
The other great thing about my easy Strawberry Blondies is that they don’t have a lot of sugar which makes these a great option when you want a sweet treat, but don’t want to overdo it on sugar. I love cake and I love cookies so it’s no surprise that I love blondies. Blondies are basically a cake and a cookie combined to create on the most delicious dessert combos you’ve ever had. I also like to call them cookie cake because that’s basically what blondies are.

The first day of Spring is March 19th which is next week! Can you believe it? Big things are happening next week like the first day of Spring and Saint Patrick’s Day which is one of my favorite holidays! I love everything about Saint Patrick’s Day and all that is represents. I especially love that it’s a lucky day and you never know what amazing things could happen to you on that day! Just think of all of the possibilities!

Easy Strawberry Blondies
ingredients:
- 1-cup flour
- 1-teaspoon Aluminum-free baking powder
- 1-teaspoon Himalayan Sea-salt
- ½-cup softened Kerry Gold butter
- 1-½ cups brown sugar
- 2-eggs
- 1-tablespoon vanilla extract
- 1-cup chopped strawberries
- ½-cup whole strawberries
- 2-cups white chocolate chips
- 2-cups dark chocolate chunks

How to cook Easy Strawberry Blondies
- Preheat oven to 350-degrees
- Line an 8x8 cake pan with parchment paper. Set aside.
- Sift the flour, baking powder, and salt together in a small mixing bowl.
- Beat brown sugar and butter together with an electric mixer in a large bowl until smooth. Beat eggs and vanilla extract into the creamy sugar mixture until smooth. Add the flour mixture and stir until just incorporated.
- Fold the white and dark chocolate chips into the batter.
- Next, add the sliced strawberries and fold them into the batter until combined.
- Pour the prepared batter into the parchment-lined cake pan. Top the batter with the whole strawberries and more chocolate chips.
- Bake at 350-degrees for 1-hour or until the center of the blondies comes out clear on a fork.
- Let cook for at-least thirty minutes before slicing into cookie bars.
