THE AVOCADO TOAST THAT LOOKS LIKE A RAINBOW
I was making avocado toast before it was cool on Instagram. I kid you not! I would buy bags and bags of avocados at Trader Joe’s before they would sell out. Their baby avocados are the best for avocado toast.
I love the buttery taste of avocados and the energy boost I get from them. It’s time to get back on the avocado train. I mean, I am doing the celery juice 7-day challenge, so this seems like the perfect time to dive back into all things avocados!
I’m on a major fresh foods and veggies kick lately. This celery juice challenge has me feeling all the feels and I’m into it one hundred percent. If you already know me then you know that I only do things one hundred percent. I go all in or not at all. And I’m all into this celery juice challenge and the Medical Mediums bandwagon.
Hopefully, everything that dude suggests in his book works because I need miracles right now.

ANXIOUS TIMES CALL FOR CALMING FOODS
When my anxiety strikes, I remind myself that's all it is a feeling. A feeling doesn't have to define me. A feeling doesn't have to take over and ruin my entire day.
A thought doesn't need to de-rail me and set me off. A thought is simply a thought. I take that thought, I place it on a leaf on a stream, and I let it float away down the river. After all, it's simply a thought.
There are so many toast variations on the interwebs. Did you know that avocados can help manage anxiety? So, the next time you feel anxiety coming on, make my delicious toast, turn on some good tunes, and you will feel a million times better. Plus, mashed avocado is simply the best.
The turmeric in this avocado recipe is activated by the black pepper and has anti-inflammatory properties to help ease bloat and boost your mood.
Did you know that turmeric’s anti-inflammatory properties can only be activated by black pepper or a fat? Luckily, avocado is full of healthy fats so adding pepper to active the turmeric is easy!
Tomatoes and micro-greens add some more fiber and help bring out the flavors even more from the avocado. This recipe is vibrant and refreshing!
RELEASE WHAT IS NO LONGER NEEDED
Here's another thing I keep on repeat in my mind: You can't control what people do. You cannot control how they react, what they say, think, or how they treat you. It's simply impossible to force someone to like you and it's even more impossible to force people to see your side.
If someone isn't digging your vibe, walk away. As Nina Simon would say: You got to learn to leave the table when love is no longer being served. Ain't that the truth?!
If someone doesn't love you, leave the table! Don't stay at the table forcing someone to want to love you or be your friend.
When someone is done, someone is done. Case closed. Shut the door and move on. Trust me, some doors are better left closed than being forced and pried open.
YOU CAN DO HARD THINGS
You CAN do it! You can do hard things. You can run fast. You can enter that race. You can get those amazing followers who dig your vibe.
YOU CAN. YOU CAN. YOU CAN!
Keep telling yourself that you can even before you know-how. It's so much easier to believe in yourself than to doubt yourself.
You'll feel better too. Believing is half the battle. Once you believe, you can more easily achieve everything you want in your life.

Avocado Toast
Ingredients:
- 2-ripe Avocados
- 1-tbs Grass-fed Butter
- 2-Slices Sourdough Bread
- ½-cup sliced Heirloom Cherry Tomatoes
- ½-teaspoon ground Turmeric
- 1-teaspoon Everything But The Bagel Seasoning
- 1-teaspoon Himalayan Sea-Salt
- 1-lemon
- ½-cup Micro Greens
Instructions:
- Toast Sourdough Bread
- Spread Kerrygold butter over the toast.
- Spread the sliced avocado over toast and mash with a fork.
- Juice 1-lemon over the top of both slices of bread and add the sliced heirloom cherry tomatoes.
- Sprinkle with sea salt, turmeric, and everything but the bagel seasoning.
- Top with the fresh micro-greens
