I love breakfast! It is hands down my favorite meal of the day and I’m known in my family as the fancy breakfast maker. I have the perfect breakfast recipe featuring Van’s® Gluten-Free Blueberry Waffles and it’s called Blueberry Waffles Breakfast Casserole. This easy breakfast recipe is fantastic because you can easily prep part of the recipe the night before and make the rest in the morning for a delicious breakfast that is perfect on your wellness journey!

PREP THIS RECIPE THE NIGHT BEFORE FOR A QUICK AND EASY BREAKFAST
My easy Blueberry Waffle Breakfast Casserole features Van’s Blueberry Gluten-Free Waffles that are made with whole grain brown rice flour, sweetened with fruit juice, and are free from dairy/egg/artificial anything/cholesterol/corn & are Non-GMO project verified. Van’s Blueberry Gluten-Free Waffles also contain 21-23g of whole grains per serving. I know I’m getting a healthier breakfast option when I chose Van’s waffles for breakfast. I also love to take their delicious Strawberry & Peanut Butter Sandwich Bars on the running trail with me and what’s even better is they are gluten-free and have 10g of whole grains in each bar.
My Blueberry Waffles Breakfast Casserole is super easy and fun to make. All you need for this yummy breakfast recipe are Van’s Blueberry Gluten-Free Waffles, fresh blueberries, Mascarpone cheese, honey, and some fresh orange zest. The first step to making the blueberry syrup is to make a compote. In a saucepan, sauté 1-cup fresh blueberries, ½-cup water, and 1-tablespoon honey and let simmer for 5-minutes until a syrup begins to form. Once the syrup has formed, remove from heat and let the sauce thicken for 5-minutes. Once thick, the blueberry compote will be a syrup for the waffles.
THE ENTIRE FAMILY WILL LOVE THIS RECIPE
Next, we make the filling for the blueberry casserole. Mix the mascarpone cheese, fresh blueberries, and honey together in a small bowl. Add some of the blueberry compote to the bowl and mix until the mascarpone cheese is a nice purple color. Toast the waffles on low twice in the toaster or until the center is nice and warm. Spread the blueberry mascarpone on one waffle. Top another waffle on top of the spread and top that waffle with more the blueberry mascarpone spread. Top with more fresh blueberries and fresh orange zest. You can make as many waffle layers as you want!
This easy breakfast is fun for the entire family to make! You can make the blueberry compote and the blueberry mascarpone the night before and top your Van’s waffles with them in the morning for a quick and nutritious breakfast.

Blueberry Waffles Casserole
ingredients:
- 1-package of Van's Gluten-Free Blueberry Waffles
- 2-cups of blueberries, divided
- 2-cups of Mascarpone Cheese
- ¼-cup honey
- 1-cup water
- 4-tablespoons honey
- Orange zest for garnish
instructions:
How to cook Blueberry Waffles Casserole
- Toast the waffles according to package directions.
- To make the blueberry compote, add 1-cup blueberries, water, and 1-4-cup honey to a saucepan on the stovetop over medium heat.
- Bring the blueberries to a boil and let simmer for 5-minutes. The blueberries should start to thicken into a syrup.
- Remove from heat and let sit for 5-more minutes.
- To make the Blueberry Mascarpone, mix 4-tablespoon honey, 2-cups of mascarpone, and 1-cup fresh blueberries until combined. Mix some of the prepared blueberry compote syrup into the blueberry mascarpone,
- Spread each waffle with the blueberry mascarpone and top another waffle on top. Make another layer of the waffles and blueberry mascarpone. Top with more fresh blueberries, orange zest, and drizzle with honey. Enjoy immediately.
