Memorial Day is Weekend is upon us and besides this holiday being a wonderful and powerful day for our country, it’s also all about the food! My easy-breezy Watermelon Pizza is easy on the eyes and quick to make. People of all ages will love this delicious, delectable fruity dessert and can dress it up with any kinds of toppings they way. All you’ll need for this recipe is fresh watermelon slices, fresh fruit, coconut cream, and some spices. MMMM….I can smell it already
Memorial Day weekend is upon us and with this powerful holiday, I also wanted to share a healthy dessert recipe that you can enjoy with your family all weekend long. Although the weather in California has been less than desirable and super unpredictable, there is finally sun this weekend and we are all very happy about it! I actually saw a GIF in Folsom chat about the weather and it went something like this. Rainy, hot, sunny, thunderstorms, sleet, wind, snow equals Spring. That GIF made me chuckle and it’s truly been the oddest of springs we’ve ever had. We are thankful for all of the rain, as it was needed and necessary but now it’s time for some fun in the sun!
For this easy-breezy recipe , all you need is watermelon, coconut cream or yogurt, and lots of yummy fruit. Who doesn't love watermelon? You can drink it, eat it, decorate it, add it to salads, eat it with steak, make it into an ice cream, juice it, add it to a smoothie and so much more! Watermelon is the summer wonder fruit and this recipe is easy, and a quick one you can access if people come over on short notice or if you're having a picnic on the beach or a fun backyard BBQ. Who doesn't love watermelon?
So with all that, let's get to slicing! You'll want to make sure you have a sharp knife to male your watermelon triangles.
Take the watermelon, then slice the watermelon in half. Next, slice the watermelon into smaller, thinner slices. Then take one watermelon slice and lay it flat on your cutting board and slice once down the middle and once horizontally and you should have perfectly sliced watermelon slices.
Now that you know how to properly slice watermelon, grab those toppings and let’s make some watermelon pizza! This Zaaaa will knock your socks off and should please everyone’s sweet-tooth at home. The best thing about this dessert pizza is that you can make it last minute if you have unexpected company. My watermelon pizza also travels well so bring it on all of your fun 3-day-weekend adventures. I like to use the shredded coconut as the “cheese” and the powered turmeric as my parm. See what I did there? Dessert pizza my friends! Always a must-have on long weekends.
What are you lovers up to this weekend? Today, I did house projects around the house that I’ve been off for years. I finally finished painting the front door in our living room. The outside of it is red and I painted the inside of the door a gorgeous pink color! It was actually a happy accident, because I meant to pull the red paint, and halfway through painting, I realized the door was actually pink. I worried for a moment that it wouldn’t look good, but then quickly realized that it matches the new rug in my living room and I was sold. And mad props to my mama because she helped me paint the door and it looks STUNNING! Seriously, I cannot wait to see it in bright, fresh, sunny daylight. Pink doors really add a pop to any room and I’m happy I’ve hopped on board to this fun, trendy design trend. It’s already made a huge difference.
I’ve also started the little room makeover. I’m so pumped about this makeover that I will be bringing you guys along with me. I’ll be taking before and afters, and posting the progress I make along the way. I scored some swag at Home Good’s today and already the little room is on it’s way to looking like a Pinterest pinning pin and I can’t wait to reveal it finished! It’s going to be so good and I truly believe that making changes to and moving out old energy and transferring it to new energy not only reinvents the room, but it also has the power to bring you what you are asking for. I’m excited for all that is coming.
Tomorrow, we are off to the coast and I can’t wait. I’m a water-baby for life and I’m excited to pack up the dogs and go!

Watermelon Pizza

My easy-breezy Watermelon Pizza is easy on the eyes and quick to make. People of all ages will love this delicious, delectable fruity dessert and can dress it up with any kinds of toppings they way. All you’ll need for this recipe is fresh watermelon slices, fresh fruit, coconut cream, and some spices. MMMM….I can smell it already!

Ingredients:
- 1-whole seedless watermelon, sliced
- 1-cup organic coconut cream or whole milk yogurt
- 1-cup organic blueberries
- 1-cup sliced organic strawberries
- 1-cup organic blackberries
- 1-cup organic raspberries
- 1-cup sliced and peeled kiwi
- 1-cup organic micro greens
- ¼-cup unsweetened shredded coconut
- 1-cup unsweetened chocolate chips or cacao nibs
- 1-tablespoon chia seeds
- 1-tablespoon turmeric and cinnamon
Instructions:
- Place the watermelon slices on cutting board and top with the coconut cream or yogurt (make sure to use really cold coconut cream and/or yogurt.)
- Next, make different pizza slices and get creative with it.
- Add the fresh fruit in any order you like on top of the coconut cream.
- Next, top each slice with the micro greens, shredded coconut, and chocolate chips
- Sprinkle on the chia seeds, turmeric powder, and cinnamon and enjoy!
- The prepared Watermelon Pizza will keep in a glass, airtight container for two days.
