Ingredients
- 1 pound lean ground beef
- 4 teaspoon extra virgin olive oil, divided
- ½ large Yellow onion, diced
- 6 Garlic Cloves, finely chopped
- 1 cup mixed cherry tomatoes (halved)
- 1 24 oz Jar Marinara Sauce
- 1 medium Zucchini, sliced into ¼-inch rounds
- 1 medium yellow squash, sliced into ¼-inch rounds
- 1 medium Grey Striped Squash, sliced into ¼-inch rounds
- 6 fresh Sage leaves, chopped
- 1 teaspoon Garlic Powder
- 1 teaspoon Garlic Salt
- 1 teaspoon Paprika
- 1 teaspoon Freshly Ground Black Pepper
- ½ teaspoon Himalayan Sea Salt
- 1 cup Freshly grated Parmesan Cheese
Instructions
- Preheat you oven 375 Faranheit
- In a large skillet over medium heat, cook the ground beef with the diced yellow onion until the beef is browned and the onion is tender. Drain any excess grease if needed.
- Stir in the chopped garlic and halved cherry tomatoes. Cook for 3–5 minutes, allowing the tomatoes to soften.
- Add the marinara sauce, chopped fresh sage, garlic powder, garlic salt, paprika, sea salt, and black pepper. Stir well and let the sauce simmer for about 5 minutes.
- Spread the meat sauce evenly into a lightly greased baking dish.
- Arrange the sliced zucchini, gray striped squash, and yellow squash in overlapping rows over the sauce. Drizzle with extra-virgin olive oil and season with a little additional salt and pepper, if desired.
- Cover the baking dish tightly with aluminum foil and bake for 20–25 minutes, or until the vegetables begin to soften.
- Remove the foil, sprinkle with freshly grated Parmesan cheese, and broil for 2–4 minutes, watching carefully, until the cheese is melted and lightly golden.
